Gallas started his career at French club Caen, helping the team to win the French Football League's second division in the 1995/96 season. He then joined Marseille in 1997. After four seasons at Marseille, Gallas was recognized by Ranieri and joined Premier League side Chelsea in 2001 for £6.2 million.

Gallas wore the number 13 shirt at Chelsea and formed a very reliable defense with Desailly and Terry, and at one point the center back pairing with Terry only conceded two goals in 20 games.

Gallas had refused to renew his contract since 2006 and had asked the club for a transfer, but Chelsea had refused, resulting in Gallas missing pre-season drills after the World Cup, much to the club's displeasure. As a result, Chelsea sold Gallas to fellow city club Arsenal for Gallas plus £5 million as a bargaining chip in exchange for Ashley Cole.

Gallas wore Bergkamp's number 10 shirt at Arsenal. Gallas was able to consolidate the team's defense with his steady and outstanding performances, and soon gained the trust of manager Arsene Wenger to sit in the starting lineup, and even took over the captain's armband from Henry in the 2007-08 season. However, after Arsenal's "four defeats", questions were raised about Gallas's ability to lead the team, but Wenger handed over the captain's armband to Gallas at the start of the 2008/09 season.

On August 22, 2010, London club Tottenham Hotspur officially announced that Gallas had joined the club as a free agent on a one-year deal.

On October 23, 2013, Gallas signed a one-year deal with Perth Glory.
