Behind all this, physical fitness is the key, while daily nutritional intake is even more indispensable. Before you can manage your legs, you have to manage your stomach, and Cao Jianmin, the nutritionist of the women's soccer team, is the one who guards the players' appetite.

Prof. Cao Jianmin is a doctoral director and professor at the School of Sports and Human Sciences of Beijing Sport University, and a leading expert in the field of sports nutrition in China. Since the 1990s, Prof. Cao Jianmin has served several national sports teams in addition to his education and research, providing logistical support for China's athletes in world competitions.

Prof. Cao Jianmin accompanied the women's soccer team to the Olympic qualifying tournament as a nutritionist, and witnessed the exciting moments together with the women's soccer team. Recently, we interviewed Prof. Cao Jianmin to learn more about the "dietary approach" of the women's soccer team and the emerging profession of sports nutritionist.

◆Soccer: Congratulations on your involvement in the women's national soccer team that made it to the Tokyo Olympics, can you talk to us about your daily duties in the team?

Cao Jianmin: This visit mainly serves as the sports nutrition and dietary nutrition of athletes. Specifically, it is the development of three meals a day roughly nutrient intake, as well as sports nutrition products of scientific and reasonable supplementation.

◆ How do you monitor the nutritional intake of women's soccer? About how often do the women's soccer players supplement their nutrition during training?

We monitor the physical condition of the athletes, and to ensure the overall physical condition of the athletes, we plan the purchase of sports nutrition products and the supplementation program of sports nutrition products for each athlete. Supplements are adjusted according to the different physical and mental conditions of the athletes. Specifically, we will give the players 150~200 ml of sports drink every 10~15 minutes during sports training.

Dietary nutrition is mainly based on the nutrition that our athletes should need, and in consultation with the cafeteria, we develop some recipes.

The cafeteria will also provide recipes, and we will make some adjustments to see which recipes are unreasonable. For example, we basically do not want some meat or deep-fried food. Generally pork is not wanted, protein foods are mainly fish, beef and mutton, generally to prevent deep-frying, fish to the main steamed, or other methods of less oil to operate.

The overall principle is to ensure nutrition first, with the right mix while reducing frying, which is our preferred choice.

The second is vegetables. Most of the leafy vegetables are supplemented with Chinese or Western salads to prevent the vitamins from being destroyed by high temperature cooking and to reduce the intake of fats and oils.

Chinese stir-fry, which tends to bring in a lot of fats and oils in the vegetables, may cause athletes to consume too many calories, resulting in conditions such as an increase in body fat, which can affect the physical and mental condition of the athlete.

There's also a lot of attention to staple foods, because soccer is a long term sport and it requires good sugar reserves, so we try to focus on pasta as far as staple foods are concerned, but of course there's also rice, a variety of pasta to sift through.

◆ What do you think are the girls' favorite and least favorite things to eat in women's soccer?

Favorite food is definitely the same as all the other girls, like to eat chocolate, love to eat cake these, but we will be in the early stage of some nutritional education to the players, we also try to prevent some of the high-fat, high-calorie intake in the operation process.

During the training period, things like high-fat cake type are basically not available. After the competition, we give some in moderation to make sure the athletes taste good, but realized that now they have basically stopped eating them.

They prefer to eat ribs, lean ribs, beef, including some cold dishes, they still prefer, including noodles.

During both the last Women's World Cup and this qualifier, a celebrity chef was hired who followed this nutritional specification and requirements that I came up with.

For example, the key to the noodles is the ingredients, we want stock, and he made this noodles taste so good by adjusting the stock, which is cooked from chicken and bones, that the players are still interested in the noodles, and it's a favorite.

What's the most impressive thing you've learned during your time in women's soccer?

I was also impressed by the fact that the children were still able to comply with the dietary requirements of our researchers.

◆Football: I'd like to know how you got involved in sports and why you chose to specialize in sports biochemistry.

Cao Jianmin: This is my specialty. I graduated from the Department of Chemistry, Jilin University, majoring in biochemistry, because the biochemistry major is to study the chemical changes of living organisms, any of the human life processes and movements, and chemical changes are closely related to the normal activities of life, which is a regular chemical changes, brought about our normal metabolism.

When these chemical changes are disturbed, it is a disorder of our material and energy metabolism, which constitutes a disease.

I graduated from university and was assigned to the North Sports in 1984 from the Chemistry Department of Jilin University, and I love sports myself.

My job, on the one hand, is to educate, so that students can grasp some of the exercise monitoring, energy metabolism and nutrition in the process of sports practice, and on the other hand, is to go to the practice.

I started bonding with sports teams in the mid-to-late 1980s, and then started more frequently in the 1990s.

◆ How does the focus on nutritional health differ between athletes and the general public?

Practice and competitive sports practice are radically different concepts.

The exercises are designed to improve your metabolism, to better correct the metabolism that you were gradually disrupting.

We all know that any disease is a metabolic disorder, such as diabetes, which is a disorder of glucose metabolism.

If I add exercise in advance when I don't have diabetes, because exercise is able to consume sugar, then it can prevent the adverse stress response of high blood sugar on me, in this way we say that physical exercise is very good to alleviate the occurrence and development of these diseases of ours.

However, if you don't have an outstanding nutrient, you specialize in eating high sugar, for example, these foods containing glucose, you are consuming sugar when you practice, but you will also constitute a damage to your health level after the practice.

So that's what we have to focus on.
